Crock Pot Cooking

Anyone out there, like me, only ever think a slow cooker was for pot roast?? Now, I can make a mean slow cooked chunk of meat, but I was thinking the other day, "there just HAS to be more to it!"

So I extend a challenge to you all. Dig through your cookbooks, call your mothers, grandmothers, heck call your dad, your friends, your friends' friends! Maybe they'll know! But find some fantastic crock pot recipes and share them here!! I beg of you, let's get crafty with our cooking :)

I make a mean chicken soup in the slow cooker, amongst other things, but sadly don't exactly have a recipe. And it's a 2 day affair which is probably more than most people want to fuss with. But for anyone that does I'll post the instructions to my blog (cause they are kind of lengthy!).

So funny, I'm planning on making a mean beef stew tonight in our slow cooker. That is if I can find it amongst our storage closet!

Yummy! My husband made some pretty yummy Borscht a few weeks ago with our crock pot. I want to try chili now!

I have a hard time finding vegetarian crock pot recipes, but I made this vegetable casserole last weekend and it was pretty good. I ended up leaving out the radicchio because the heat made it turn brown. Next time I might add a layer of zucchini and yellow squash. The polenta makes it very comfort food-ey!
